We purchased 5 day passes which were good over 8 days. I was not aware that you had to specify which day you would be going. Sorry, can't help you with this.

Just a tip- if your going between Epcot and Magic Kingdom you can park at the Transportation Center and ride the Monorail between the two parks. If your going to Epcot and Hollywood Studios take the boat that travels between the two parks. Have a good time! Parking is $25 but worth every penny.

Most of the countries have plenty of indoor "time", as the shops tend to be open into one another so one doesn't have to exit to venture through. Live shows, such as England and Japan, are mostly outdoors without covered viewing spots. If the concern is rain, other than a downpour with wind, an umbrella works fine. The front rows of the America entertainment pavilion also are covered.

Snack credits can be redeemed in many different places and if you’re going during a festival time many of the booths will offer some options that are snack credits.
