Looking at taking this cruise but need to know how physically taxing it is. I have Parkinson’s and am very active but occasionally need a hand with unlevel surfaces and do occasionally need to rest. Would this trip be extremely physically taxing or could it be managed?

There are some uneven surfaces, but staff are helpful especially for an advance tip. I think you should manage ok. Enjoy it while you still can.
